5Red Pepper And Tomato Soup

Red Pepper And Tomato Soup

Ingredients

  • 2 tablespoons of oil
  • 1 onion peeled and sliced
  • 450g/1lb tomatoes take seeds out, chopped
  • 2 red peppers take seeds out, sliced
  • 600ml/1pint of hot stock
  • 1 teaspoon dried mixed herbs
  • 2 teaspoons of granulated sugar
  • 4-5 teaspoons concentrated tomato or tomato puree
  • 1 tablespoon of lemon juice
  • salt and freshly ground black pepper to season.
  • yoghurt to serve

 Method

  1. Put oil in a bowl and cook for 1 and a half mins, add onion and sliced pepper and cook for 6 min. add tomato and stir in the stock, herbs, sugar, tomato puree and lemon juice.cook for further 6 mins, then taste and adjust the seasoning.
  2. Remove few slices of pepper from a bowl and puree the soup return the reserved pepper slices to the soup and serve topped with a whirl of yoghurt.

4Garlic And Chilli Rice Soup

Garlic And Chilli Rice Soup

Ingredients

  • Finely chopped bunch of spring greens
  • Black pepper powder
  • 5 cups vegetable stock
  • 1 tablespoon soy sauce
  • 100g brown rice
  • 3 carrots sliced
  • 1 finely grated ginger
  • 2 spring onions chopped
  • 1 tablespoon vegetable oil
  • 2 chopped garlic cloves
  • 1 small red chilli deseeded and chopped
  • 2 teaspoons Sesame Oil

Method

  1. In a wok pan, heat up oil over high heat. Fry garlic and spring onions.
  2. Add, chilli, rice and ginger to your pan then stir-fry for about a minute.
  3. Add 5 cups of stock and soy sauce, bring to boil.
  4. Cover with lid, lower the heat and cook for 30-40 minutes. The rice will be soft and soup would have thickened which is what you want. Add spring greens, let them cook until tender.
  5. Spoon soup into serving bowl, sprinkle spring onions and serve.

Healthy Tasty Vegetable Soup

 Ingredients

  • 1 chopped onion
  • 1 stick of chopped celery
  • 1/2 of a leek chopped
  • 1 medium potato diced
  • a vegetable stock cube
  • 1 tsp mixed herbs (optional)
  • a squeeze of tomato puree
  • a little oil
  • a pinch of salt

Method

  1. Put all the ingredients into a pot and pour enough water to cover the ingredients. Bring to boil and then turn down the heat so the soup cooks gently. Allow cooking for half an hour.
  2. With a fork, poke some of the vegetables to make sure they are cooked. Season with salt and serve.

2Mixed Bean And Tomato Chilli Soup

Mixed Bean And Tomato Chilli Soup

Ingredients

  • 1 fresh red chilli
  • 1 large handful of coriander
  • 2x400g tinned tomato
  • 2x400g mixed beans (drained and rinsed)

Method

1) Thinly slice the chilli, then put into a pan. Add the tomato and mixed beans and simmer gently on a medium heat for 5mins.

2) Finely chop the fresh coriander. Set aside for the garnish and add the remainder to the tomato and bean mixture. Stir to mix all the ingredients together.

3) Bring the mixture to the boil, then reduce the heat. Stir the mixture occasionally and add some water if the sauce starts to dry out. cook for 20-30mins.

SERVE HOT AND ENJOY!

1Leek And Potato Soup

Leek And Potato Soup

Ingredients

  • 2 tbsp oil
  • 2 leeks (chopped)
  • 1 small onion
  • 3-5 potato
  • 600ml chicken stock
  • salt and pepper

Method

1) Heat the oil in a pan, add the chopped leek and onion, cook gently for about 7mins stirring occasionally so they don’t stick to the bottom of the pan.

2) Add the potato, stirring occasionally for 2-3mins. Add the stock and bring to the boil then reduce the heat. Season with salt and pepper. Simmer for around 30mins.
